: Hot and Spicy Cheese Dip

Makes: 3 cups (750 mL)

1: Melt butter in saucepan over medium heat. Add flour, cumin, garlic powder and onion powder and stir until a paste forms. Cook and stir about 1 minute. Whisk in evaporated milk. Bring to a boil, whisking constantly, reduce to simmer and continue cooking until thickened, about 2 minutes. Stir in cheese until melted. Stir in hot pepper rings and hot sauce. Serve hot.
: Hand Dipped Pepper Fries
2: Preheat oven to 450°F. Line a baking sheet with foil. Drizzle with oil and heat in oven while preparing peppers. Place flour in small bowl. Combine egg and pepper sauce in one bowl, bread crumbs and cheddar cheese in another. Dip peppers into flour, then egg mixture, then panko mixture. Carefully place peppers on pan in hot oil. Bake 5 minutes per side, or until golden brown.
: Oven Avocado Fries

Combine egg and pepper sauce in one bowl, bread crumbs and cheddar cheese in another. Dip avocado pieces into flour, then egg mixture, then panko mixture. Carefully place on pan in hot oil. Bake 5 minutes per side, or until golden brown.
