Beet and Tahini Dip – Vegan

Ingredients

1 clove garlic

500 ml (each)2 jars Habitant® Whole Baby Beets, drained

15 ml1 tbsp lemon juice

30 ml2 tbsp olive oil

50 ml1/4 cup tahini

Salt to taste

Chopped mint, olive oil and sesame seeds for garnish

Directions

 1 Chop garlic and beets in bowl of food processor or blender. Add remaining ingredients except garnish. Taste and adjust salt and lemon juice if necessary. Place in serving dish and garnish with olive oil, mint and sesame seeds if using. Serve with:

 2 Habitant® Whole Baby Beets, sliced in half and garnished with microgreens, celery sticks, walnuts, dates, vegan feta, Habitant® Sweet Pickled Gherkins, on bed of fresh mint, naan rounds cut in quarters, Bick's® ½ Salt Baby Dill Pickles, Bick's® Hot Pepper Rings, crackers, fresh rosemary, toasted walnuts, fresh chopped mint, olives, dried apricots.
