Chicken Parmesan

4 boneless skinless chicken breast
1 egg
½ tsp (2 mL) salt
¼ tsp (1 mL) pepper
¾ - 1 cup (175-250 mL) dry bread crumbs
2 tbsp (30 mL) Crisco® Canola oil
1 can tomato sauce (14 oz/398 mL)
1/3 cup (75 mL) Bick’s® Zesty Onion Relish
1 clove garlic, minced
1 tsp (5 mL) basil leaves
1/3 cup  (75 mL) grated Parmesan cheese
1 ½ cups (375 mL) shredded mozzarella cheese
1. Pound chicken between plastic wrap to ¼” (5mm) thickness.

2. Beat egg, salt and pepper in shallow dish. Dip chicken in egg mixture, letting excess drip off, then into crumbs , coating chicken thoroughly.

3. Heat oil in large frying pan on medium heat. Brown chicken on both sides. Place cooked chicken in single layer in large shallow dish.

4. Add sauce, relish, garlic and basil to frying pan. Bring to a boil; pour evenly over chicken. Sprinkle with Parmesan cheese.

Bake at 350°F (180°C) for 15 to 20 minutes, or until bubbling; sprinkle with mozzarella cheese; return to oven for 5 minutes, or until cheese is melted.

Preparation Time : 20 minutes
Cooking Time : 25 minutes

Makes: about 4 servings

Tip:
1. Havarti cheese in place of mozzarella also gives this dish a wonderful taste.
