Crispy Chicken Schnitzel Sandwiches with Kicked up Dressing

Kicked up Dressing:
½ cup  (125mL) mayonnaise
1 tsp  (5mL) Dijon mustard
1 clove garlic, minced
1 tsp  (5mL) brine from Bick’s® Sandwich Savers® 50% Less Salt Tangy Dill Pickles
¼ tsp (1mL) paprika
1 tbsp  (15mL) minced parsley
Kicked Up Dressing: Combine all ingredients.

Chicken Schnitzel:
Oil for frying
1 egg
Salt, pepper garlic powder and seasoning salt to taste
1 cup (250mL) panko or regular bread crumbs
4 (3oz/100g each) chicken breast cutlets, pounded thin
4 hamburger buns
Lettuce, tomato slices, red onions slices, Bick’s® Sandwich Savers® 50% Less Salt Tangy Dill pickles
1. Chicken Schnitzel: Heat oil in large skillet.

2. Meanwhile, combine egg and seasonings in one bowl, and panko and seasonings in another bowl.

3. Dip chicken into egg and then coat in panko crumbs. Carefully place in hot oil, and cook until golden brown, about 1 minute per side.

4. Remove to a paper towel lined plate. Spread hamburger buns with kicked up dressing. Top with chicken, lettuce, tomato, red onion and Bick’s® pickles. Enjoy!

Preparation Time : 20 minutes
