Carry Over Coleslaw

10 cups (2.5 L) shredded green cabbage
1 cup (250 mL) diced red pepper
1 cup (250 mL) Bick’s® Sweet Corn Relish
3/4 cup (175 mL) grated carrot
4 green onions, chopped
¾ cup (175 mL) Gattuso® Pitted Black Olives, sliced
1 cup (250 mL) vinegar
½ cup (125 mL) oil
1/4 cup (50 mL) granulated sugar
1 clove garlic, minced
1 tbsp (15 mL) dijon mustard
1 tbsp (15 mL) celery seed
salt and pepper to taste
1. Mix cabbage, pepper, relish, carrot, onions and olives in large bowl.

2. Combine remaining ingredients in small saucepan. Boil 5 minutes. Pour hot liquid over vegetables. Mix well.

3. Cover and refrigerate overnight, stirring occasionally.

Preparation Time : 15 minutes
Chilling Time : 12 hours

Makes: 6-8 servings
