Breakfast Hash Brown Omelette

6 slices of bacon
3 cups (750 mL) frozen hash brown potatoes
or shredded cooked potatoes
½ cup (125 mL) chopped green pepper
1/3 cup (75 mL) Bick’s® Zesty Onion Relish
6 eggs
¼ cup (50 mL) milk
salt and pepper to taste
1 cup (250 mL) shredded cheddar cheese
1. Cook bacon in 10-inch (25cm) frying pan until crisp. Remove from pan. Drain and dice. Leave 2 tbsp (30ml) drippings in pan. Add potatoes. Cook, stirring occasionally, until heated through. Add green pepper and relish. Cook 15-20 minutes, or until underside is starting to brown.

2. Beat eggs, milk, salt and pepper in medium bowl. Stir in cheese and bacon. Pour evenly over potatoes. Mix slightly to let egg mixture seep through potatoes.

3. Cover; cook in low for 8-10 minutes, or until eggs are set. If desired, broil lightly to brown. Loosen edges serve in wedges.

Cooking Time : 35 minutes
