Hot Pepper Jelly

2 jars (750 mL) Bick’s® Hot Pepper Relish
½ cup (125mL) cider vinegar
1 box Certo LIGHT Fruit Pectin Crystals
3 ¼ cups (800mL) granulated sugar, divided
1. Sterilize jars and lids according to package directions.

2. Combine relish and vinegar in large saucepan. Mix pectin crystals with ¼ cup (50mL) sugar. Stir into relish and vinegar mixture.

3. Cook, stirring constantly over high heat until mixture comes to a full boil. Stir in remaining sugar. Bring to a boil, then stirring constantly, boil hard 1 minute. Remove from heat and stir and skim off foam for 10 minutes. Pour into sterilized jars. Seal while hot with sterilized lids.

Preparation Time : 30 minutes
Cooking Time : about 10 minutes
Freezing: not recommended

Makes: 5 cups (1250mL)
