Celebrating Pickles: It's International Pickle Month

People have been making pickles for a very long time... according to history books, since 2030 B.C.! Since that time, pickle-making has become an art, and pickles have become a classic snack and much-loved condiment around the world.

Pickling food – or preserving fruits and vegetables with salt, sugar and vinegar – was a matter of survival for early man. It ensured a supply of food during famines and long winters. Eventually, someone decided to pickle cucumbers… and the first pickle was created!

Since that time, pickle makers have perfected the process to include different methods of pickling as well as many different types and flavours:

Dill pickles are probably the most popular variety – the classic taste, a result of dill. Kosher dill pickles have garlic added. There are also baby dills, and Polish style pickles, which are known for their tangy, sour taste. Dill pickles are enjoyed right out of the jar!

Gherkins are a small, delicate pickle. They have a very distinctive sweet taste and are often used as garnishes or found on the appetizer tray during special occasion entertaining.

Sweet pickles or bread and butter pickles are packed in a mixture of vinegar, sugar and spices such as celery seed, mustard seed and tumeric . They too, have a distinctive sweet tangy taste. They're available cut into thin slices, a convenient size for sandwiches and burgers, or in thick, yummy chunks. Many people serve them as a side dish on the dinner table.

The pickle section in the grocery store includes other pickled vegetables too. You'll find products such as pickled banana peppers, beets, cauliflower, cocktail onions, sauerkraut, and sweet mixed vegetables such as cucumber and cauliflower.

Pickles are great as a snack and condiment, served not only with hamburgers and sandwiches but as crunchy, flavourful ingredients in a variety of recipes. Visit Bicks.ca for delicious recipes that unleash the flavour and great grilling tips!
