What makes a pepper hot?

One of the active components found in chili peppers is capsaicin. It is this capsaicin that creates the spice and heat that we love from chili peppers.

How Hot is Hot?

What may taste mild to some is hot to others. So how is the heat level in peppers and chilies measured? In 1912, Wilbur Scoville developed a scale called the "Scoville Scale" which measures the pungency level of any given pepper. There are other methods of measuring "heat" but most folks still use and respect the Scoville scale. To put the scale into perspective, a sweet bell pepper has a Scoville rating of 0. A jalapeño pepper has a Scoville rating of 2,500 to 8,000. A habanero or scotch bonnet chili has a Scoville rating of 350,000 to 580,000. Definitely two peppers where the adage "a little goes a long way" is true.
